Saffron is the stigma of the Crocus sativus plant, an ornamental perennial of the lily family. The Crocus sativus plant blooms for approximately three weeks in the fall, with each plant producing two to nine flowers per season. Each flower contains three stigmas that must be harvested by hand. This labor-intensive process contributes to Saffron’s renown as one of the most expensive spices in the world.
Saffron prefers extreme climates where summers are hot and dry and winters cold. The highest quality saffron is grown primarily in the harsher climates of the La Mancha region of Spain, the Greek prefecture of Kozani, and Kashmir (the region between India, Pakistan and China). Our Saffron comes from Spain.
