Sage typically has a very strong warm, woodsy flavor, so you can use this spice sparingly. It can be added at any time throughout the cooking process, but again be careful with the amount used as it can quickly overpower a dish.
The robust flavor of rubbed sage is best used in stuffing, roast poultry, beef and venison stews, and pot roast. Also try adding a little to dark gravies to add an extra aromatic and snappy flavor.
