Chives are closely related to onions and garlic, although they have a much more delicate flavor. The sophisticated process of freeze-drying led to a dramatic increase in the popularity of chives during the twentieth century. Freeze-drying removes moisture from the newly harvested chives without damaging the cell structure, and therefore flavor, of the delicate herb. The finished product has all the flavor, color and shape of fresh chives and can be substituted in equal amounts in a recipe.
Chives can be used in any recipe that calls for green onion and will produce a slightly more mild flavor. Chives are a great addition to potato and cheese dishes, as well as stir-fries, herb butters, eggs, sauces, and soups. Chives are also included in the French herb blend Fines Herbes, a combination of chives, chervil, parsley, and tarragon.
