Baking Soda

Baking soda is commonly used in cooking and baking as a leavening agent. Baking soda is sometimes used when cooking vegetables to make them softer, although this practice has recently fallen out of fashion. It is still used in Asian cuisine to tenderize meats. Baking soda can also be added to batters for fried foods to increase crispiness.
