Cuban flavors meet some cajun heat in this delicious Frijoles Cubanos recipe (street name – Cuban Beans). Easy to put together, and healthy to boot!

Ingredients:
- 2 cups brown rice
- 4 cups water
- 1 lb ground turkey
- 1-2 tbsp olive oil
- 1 medium onion (diced)
- 2 (15oz) cans black beans (rinsed and drained)
- 1 tbsp cajun seasoning
- 2 tsp cumin
- 1 tsp cilantro
- ½ tsp chipotle powder
- ¼ cup red wine vinegar
Directions:
- Cook brown rice per directions on package. (add water and rice to pan, bring to boil, cover, lower heat and simmer for 45 minutes or until tender. Optional-use rice cooker)
- While rice is cooking, add olive oil and onions to pan and saute over med-high heat until onions are tender and translucent. Add ground turkey and cook until done. (be sure turkey is completely cooked through, no pink and clear juices). Stir in beans, cajun seasoning, cumin, cilantro and chipotle powder. Mix well, and add vinegar. Cover and simmer on low for 15-20 mins. If moisture level seems too low, add and additional ¼ cup water.
- Serve bean and turkey mixture over cooked rice. Add a little hot sauce on top, and enjoy!
