Mustard is a very old herb that has been used since the earliest recorded history. It is even referred to in the Bible as the “greatest among herbs.” There are three different types of mustard: white or yellow, brown and black. Mustard has little distinct aroma in seed form or even when ground. This is because mustard contains an enzyme called myrosinase, which only creates the typical hot and spicy flavor typical of mustard when it comes into contact with liquids.
Yellow mustard seed is a key ingredient in many pickling spices and crab boils, and is often added to sausages and other processed meats. It can also be used to create unique coarse ground mustard dressings.
