Our Lemon Peel (also known as lemon zest) is the outer skin of the lemon fruit that had been dehydrated. This peel is very high in essential oils so the flavor is very robust. This peel comes in larger chunks, so it can be ground down to finer sizes depending on what the recipe calls for. It can also be soaked in water for 20 minutes to reconstitute. When using lemon peel in place of fresh lemon zest, only use 1/3 of what the recipe calls for.
