Fenugreek is a member of the pea family and has a similar appearance to alfalfa. The foliage was utilized by the Romans to sweeten the scent of mildewed or sour hay and is still used today as a supplement fodder for horses and cattle. Ground fenugreek is dull yellow in color and has a sweet, yet bitter, flavor with a hint of maple. For this reason fenugreek must be used with caution, as its bitterness can easily overpower a dish.
Fenugreek is often included in curry spices and is an important ingredient in panch phora, a versatile blend of spices used in curries or added to spicy pastries and potato dishes. Ground fenugreek may also be added to mayonnaise, the same way mustard powder is frequently called for, to give a similar taste with less heat.
