Cocoa powder comes from the beans of the cacao tree, a small evergreen native to South America. Cacao beans are naturally sugar free and can taste somewhat bitter in their raw form. Cacao beans are put through a complex process of fermenting, roasting, grinding, pressing, and additional grinding in order to produce the cocoa powder commonly used for baking and other culinary activities.
The rich, intense and bittersweet flavor of our natural cocoa powder is a great addition to baked goods such as cakes, cookies and brownies. It can also be used to replace unsweetened chocolate squares at a ratio of 3 tbsp. cocoa powder to 1 oz. of chocolate.
