This easy chili mac dinner is sure to satisfy the whole family. Who needs Hamburger Helper when you have good spices and a few raw ingredients!
Ingredients:
- 1 tbsp butter
- 1 pound ground beef
- 1 onion, minced
- 1 ½ tbsp chili powder
- 1 tsp ground coriander
- 1 tsp cumin
- 1 ½ tsp garlic powder
- 1 ½ tsp onion powder
- 1 tsp sea salt
- 3 garlic cloves, minced
- 1 tbsp brown sugar
- 2 8 oz. cans tomato sauce
- 2 cups water
- 8 oz (2 cups) elbow macaroni
- 1 cup frozen corn
- 1 4.5 oz can green chiles
- 2 tbsp fresh cilantro, chopped
- 2 cups shredded cheese (Mexican blend or a combination of Monterrey jack and cheddar)
Directions:
- Melt butter in a 12-in non-stick skillet over medium heat. Add onions and cook until onions become soft, about 5 minutes. Add ground beef and cook until no longer pink, drain.
- Return beef and onions to skillet. Stir in garlic and spices, mix well. Add brown sugar and cook until fragrant, about 30 seconds. Stir in tomato sauce, water and macaroni. Bring to a boil, reduce heat, cover and simmer for 12-15 minutes or until pasta is cooked.
- Stir in 1 cup on cheese, corn, green chiles, and cilantro. Sprinkle remaining cheese on top. Cover and let sit off heat until cheese melts.
