This refreshing cocktail is the perfect companion to a hot summer day! Plus, they are a great way to use up some of those prolific cucumbers in your garden. Try a Cucumber Melon Gin Spritzer at your next cookout or on the back porch after a long day!

For the Melon Simple Syrup:
- 1 cup water
- 1 cup sugar
- 2 cup cantaloupe cubes or balls
For the Cocktail:
- 2 oz. melon simple syrup
- 5 oz. gin
- 1 oz. seltzer water
- 1-2 tbsp Cucumber Melon White Balsamic Vinegar
- melon balls/cubes
- cucumber slices
- fresh mint
In a small saucepan, combine water and sugar and bring to a boil. Let boil for 30 seconds. Remove from heat and let cool completely. Once cooled, add to a blender or food processor with the cantaloupe cubes/balls. Blend until completely smooth.
To make the drink, add ice to a cocktail shaker along with a fresh mint leaf. Add the simple syrup, Cucumber Melon White Balsamic Vinegar and gin. Shake for 30 seconds. Fill glass with ice, a few melon balls and cucumber slices, and pour in the the drink. Top with seltzer and stir to combine. Garnish with mint and extra cantaloupe or cucumber slices.
