Our tasty Cinnamon Raisin Oat Squares are packed with nuts and dried fruits, making them the perfect energy boost you need in an afternoon snack!

1 1/2 cup old fashioned oats
1 cup chopped pecans
1/2 cup chopped walnuts
1 tsp cinnamon
1/3 cup honey
1/4 cup molasses
2 tbsp butter
1/4 tsp sea salt
1 tsp vanilla extract
1 cup rice cereal
1/2 cup raisins
1/4 cup dried apricots, finely diced
Preheat oven 350. Combine oats, pecans and walnuts with cinnamon. Spread onto a rimmed baking sheet and bake for 10-15 minutes, or until toasted. Remove from oven and reduce heat to 300.
Meanwhile, combine butter, honey, molasses, and sea salt in a small sauce pan. Bring to just boiling over medium heat. Remove from heat and add vanilla.
In a large bowl, combine nut/oat mixture, honey/molasses mixture, rice cereal, and dried fruits. Stir until well coated. Line a 13 x 9 rimmed baking sheet with foil and spray with cooking spray. Spread mixture into pan, pressing to form a sheet. Bake for 15-20 mins, or until golden brown.
Transfer to a wire rack until cooled completely. Remove from pan using foil and cut into squares. Enjoy!
