This super easy and delicious potato salad is the perfect addition to summer cookouts and pot lucks! This simple recipe is easily adjustable to number of servings needed.

Ingredients:
2 cups Yukon Gold potatoes, diced
1 cups hard boiled eggs, diced
1/2 cup chopped sweet pickles or sweet pickle relish
2 parts Miracle Whip or Mayonnaise (can be adjusted to reach desired creaminess)
1 part yellow mustard (adjust to match amount of mayo used)
Splash of pickle juice
Pig Tickle or Seasoning Salt to taste
Directions:
Cook potatoes until soft and easily mashable. Drain. Mash potatoes in a large bowl using a hand masher. (We don’t recommend using an electric mixer as the salad comes out a little too creamy.) Mix in hard boiled eggs and pickle relish. Add in Miracle Whip or mayonnaise and mustard until you reach your desired creaminess. Add a splash of pickle juice for acidity if needed and season with Pig Tickle or Seasoning Salt to taste. Chill for at least 30 minutes to allow flavors to set.
