These little meatloaf muffins are absolutely amazing! I was skeptical at first, but this is seriously some of the best meatloaf you will ever try. Plus, it is healthy to boot! This recipe makes 8-10 muffins, but recipe can easily be doubled.

Ingredients:
- 1 lb ground turkey
- ½ cup quick cooking oats
- 1 egg
- 1/3 cup onion (chopped, fine)
- 1 stalk celery (chopped, fine)
- ¼ cup parsley (chopped)
- 1 tbsp garlic powder
- 1 tsp dry mustard powder
- 1 tsp black pepper
- 1 tsp chipotle powder
- ½ tsp cumin
- ½ tsp thyme
- ½ tsp salt
Directions:
- Combine all ingredients in large bowl (or stand mixer). Mix well by hand or with mixer paddle.
- Grease muffin pan. Form meat mixture into 7-10 balls and place in the muffin pan. Cook in preheated oven for 35 mins. Meatloaf is done when internal temperature reaches 165 degrees.
